1. Japanini .25– A Perfect Blend of Japanese Shiso and Western Flavor
Japanini bread at Bread Bar by Okayama Kobo
Japanini $4.25
You won’t find anything like this elsewhere in Guam.
The Japanini is a savory bread that blends traditional Japanese shiso leaf (also known as oba or perilla) with bold Western ingredients like basil pesto, cheese, and salty ham.
At first glance, you might hesitate—shiso isn’t exactly common in Western cooking.
But don’t let that stop you.
The taste is surprisingly well balanced and quickly becomes addictive.
Cross section of the Japanini breadInside view of the Japanini breadTip: What is shiso? Click here!
Shiso is a leafy herb in the mint family, often used in Japanese and other Asian cuisines. It has a refreshing, slightly minty and citrusy aroma, and is commonly enjoyed with sushi, sashimi, noodles, and salads. If you’ve never tried it before, this bread is a great first experience. (More details on Wikipedia / Shiso.)
The bread is lightly toasted for a crispy crust, while the inside stays soft and fluffy—a signature texture of Japanese bread-making.
The first bite bursts with the fragrance of shiso, followed by a satisfying blend of cheese richness and savory ham.

2. French Toast .75– Thick, Fluffy, and Rich in Every Bite
French toast made with Japanese milk bread
French Toast $3.75
If you’re a fan of sweet, satisfying breads, the French Toast at Bread Bar by Okayama Kobo is a must-try.
This isn’t your typical diner-style French toast—it’s made with thick slices of Japanese milk bread, soaked in what seems to be a luxurious blend of milk and heavy cream.
From the first bite, the soft, custardy texture stands out.
It’s subtly sweet and has a deep richness, likely due to the use of real cream, not just milk.
The flavor lingers pleasantly, making it feel more like a dessert than a simple breakfast item.
Hot or Cold? Though it’s sold at room temperature, I tried heating it in the microwave. It still tasted great, but the texture changed a little—the edges became a bit firm, so I actually recommend eating it as is, without reheating.

Chocolate Croissant $4
At first glance, you might think this croissant doesn’t have much chocolate.
But take one bite, and you’ll realize it’s packed with rich, bittersweet flavor.
Bread Bar by Okayama Kobo uses a dark, high-cacao chocolate that perfectly balances sweetness and depth—ideal for those who want a treat without a sugar overload.

The croissant itself is a masterpiece.
Light, buttery, and full of air pockets, it’s a shining example of Japanese-level baking precision.
The crisp outer shell shatters delightfully when bitten into, while the inside remains tender and flaky.
It’s the kind of pastry that could easily be served in a high-end hotel.

Whether you enjoy it fresh or chilled, the texture and taste hold up beautifully.
It’s not too big either, making it perfect as an afternoon snack or light dessert—and honestly, you could eat two without feeling too heavy.

4. Kobo Kuma – Custard-Filled and Adorably Designed for Kids
Kobo Kuma custard bread at Bread Bar by Okayama Kobo in Guam
Kobo Kuma $4
If you’re looking for a sweet bread that delights both kids and adults, Kobo Kuma is a must-try.
This custard-filled bear-shaped bun from Bread Bar by Okayama Kobo offers more than just a cute face—each one has a unique hand-drawn bear expression, making it fun (and a little hard) to choose just one.

I looked it up online and found that Okayama Kobo has locations not only in California on the U.S. mainland but also in Hawaii.
Among their items, “Kobo Kuma” seems especially cute and popular—I even saw people sharing it on Instagram.
It’s exciting to be able to choose from so many cute faces right here in Guam.

Picking Up a Bit of Japanese Culture
In Japan, character-themed bread—commonly known as “chara-pan”—is very popular.
However, it’s not something you often see in Guam, which makes Kobo Kuma feel fresh and unique here.
What really sets Kobo Kuma apart is its smooth and aromatic custard cream, with visible specks of real vanilla beans.
Cross section of Kobo Kuma custard bread
Unlike many cream-filled breads in Guam that use heavy whipped cream, Kobo Kuma sticks to the traditional Japanese custard style: not too sweet, never greasy, and very satisfying.
Nearly half the bun is filled with custard, so every bite has a perfect balance of cream and soft bread.
Custard-filled interior of Kobo Kuma bread
The bun itself is incredibly fluffy, with no crusty or crisp edges—just pillowy softness. It’s clear that this requires real baking skill, as the custard is evenly distributed without making the bread soggy.
Compared to other options like Mayflower’s cream bread, Kobo Kuma stands out for its balance, texture, and adorable design, making it a great souvenir or a fun snack for kids in Guam.

5. Cookies S&B Roll .25 – Sweet, Salty, and Surprisingly Addictive
Cookies S&B Roll at Bread Bar by Okayama Kobo Guam
Cookies S&B Roll $4.25
Bread Bar by Okayama Kobo’s Cookies S&B Roll is unlike anything you’ve likely seen—even in Japan.
It’s not your typical roll bread, nor just a cookie-topped treat.
Instead, it’s a fusion of crispy sweetness and savory depth, resulting in a truly original bakery item worth talking about.
This bread starts with a high-quality, hand-rolled white dough, known for its chewy and moist interior.
Cross section of Cookies S&B Roll
The roll itself is slightly salted, balancing perfectly with the crispy, sugary cookie topping that wraps around the surface like a golden crust.
The contrast between the chewy base and the crunchy top is surprisingly satisfying—it’s not a bread that melts in your mouth, but one you’ll want to chew slowly and savor.
Cookie crust on Cookies S&B Roll
What makes it even more interesting is how rare this style is: it’s not commonly seen in Western bakeries or even in Japanese ones.
One of the staff members mentioned it actually sells better than their regular roll bread, and we can see why.
This bread showcases a high level of craftsmanship.
The roll’s elasticity and gluten structure give it a unique “mochi-mochi” chew—something that’s usually missing from lower-quality rolls.
If you’re looking for a new favorite sweet-savory combo at Bread Bar by Okayama Kobo in Guam, this one’s it.

6. Sunrise .75– A Cute Japanese Classic with Crispy Charm
Sunrise melonpan-style bread shaped like a turtle
Sunrise $3.75
If you’ve never tried melon pan, Sunrise might be the cutest introduction.
Shaped like a turtle, this Japanese-style sweet bread combines a soft interior and a crisp cookie crust, all while looking like something out of a children’s storybook.
Tip: What is Melonpan?
Melonpan is a Japanese sweet bun covered with a crisp cookie layer. The shape and texture resemble a melon, but it’s usually not melon-flavored. (Based on Wikipedia.)
Example of classic melonpan bread
The Sunrise version at Bread Bar by Okayama Kobo is an adorable spin on this classic: shaped like a turtle, with a rounded cookie-shell back, a little face, and stubby legs.
The cookie crust is just the right crispness, while the bread underneath is light, fluffy, and gently sweet—without that lingering sugary aftertaste you often find in overly sweet breads.
Sunrise turtle-shaped bread popular with kids
It’s also not something you’ll find in most bakeries around Guam.
Because melon pan requires precise baking techniques, it’s a rare sight outside of Japan.
This makes Sunrise at Bread Bar by Okayama Kobo feel even more special.
★ Perfect for kids (and adults who love cute things), this is a treat that looks good, tastes better, and reminds you that baking can be both fun and high-level.
